Want the Perfect K-BBQ? Korea Has a Certification for That
As samgyeopsal continues to strengthen its place in the global K-food boom, South Korea is raising the bar for Korean barbecue. A professional grilling certification is gaining attention among restaurant owners who want to perfect their cooking techniques and deliver a more consistent dining experience.
The 19th Sunjin Grilling Meister certification exam was recently held at Yaksan Dwaeji, a pork barbecue restaurant in Seoul's Dangsan area. Operated by the Sunjin Meat Culture Research Institute since 2021, the privately registered certification tests participants on both theoretical knowledge and practical grilling skills.
The practical exam covers everything from temperature control and searing to the Maillard reaction, the chemical process responsible for the browning and rich flavors that develop when meat is cooked. The goal is to turn grilling into a repeatable process rather than relying solely on individual experience.
Sunjin has established specific guidelines for cooking pork belly. According to its standard method, samgyeopsal cut 2.3 centimeters thick is placed on a grill preheated to 210 degrees Celsius for two minutes before being flipped and grilled for another two minutes. Grill temperature must also be carefully managed to prevent excessive smoke and keep the meat juicy.
"As samgyeopsal has become a signature K-food and competition over quality among barbecue restaurants has heated up, the total number of test takers has reached 400," a Sunjin official said.
Eight participants took part in the latest exam, many hoping to apply what they learned directly to their businesses. For restaurant owners, earning the certification is not just about improving their own technique. It also provides a framework for training staff, standardizing cooking procedures, and promoting their restaurants to customers.
"I plan to teach these grilling skills to my staff as well," said Eo Gyu-bin, 33, who runs a pork barbecue restaurant in Seoul's Gangseo district.
As Korean barbecue gains greater international recognition, the way meat is prepared is becoming an increasingly important part of the dining experience. With certifications like Sunjin Grilling Meister, the industry is placing greater emphasis on consistency, technical skill, and the quality of every serving of samgyeopsal.
